Similar in taste to brownies, these mouthwatering cookies are filled with rich chocolate goodness. Simple to prepare with on-hand ingredients, the microwave makes it easy to melt the chocolate chips, butter, and sweetened condensed milk.

By adding the remaining ingredients to the melted chocolate mixture, a decadent batter is ready for baking. Pair with a glass of milk and savor the ultimate in homespun comfort.

CHEWY CHOCOLATE COOKIES

1 cup flour
1 tablespoon unsweetened cocoa powder
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 (12-ounce) package semisweet chocolate chips
1/4 cup (1/2 stick) butter, softened
1 (14-ounce) can sweetened condensed milk
1 egg, beaten
1 teaspoon vanilla

Preheat oven to 350 degrees. In a small bowl, combine flour, cocoa powder, baking soda, baking powder, and salt. In a medium microwave-safe bowl, combine 1 cup chocolate chips, butter, and condensed milk. Microwave on HIGH until chocolate chips have melted, about 2 minutes, stirring once halfway through; stir until smooth. Whisk in egg and vanilla. Stir in the remaining chocolate chips. Add flour mixture. Stir until smooth. Drop by heaping teaspoons 2 inches apart on ungreased cookie sheets. Bake until centers are almost set, 6 to 8 minutes. Cool 5 minutes before removing to a wire rack. Makes about 4 dozen cookies.

Filled with homespun flavor, this tasty bread is great for an afternoon snack. The cinnamon chips are a scrumptious addition and a touch of cinnamon further enhances the spicy taste. You can also substitute chocolate or white chips in place of cinnamon chips, if desired.

Whether paired with a glass of milk, a cup of coffee, or simply as a grab-and-go treat, a slice of banana bread with a smattering of cinnamon chips is always welcome.

BANANA CINNAMON CHIP BREAD

1 1/2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
1/4 teaspoon salt
2 eggs
2 ripe medium bananas, mashed
3/4 cup sugar
1/2 cup (1 stick) butter, melted
1/2 teaspoon vanilla
1/2 cup cinnamon chips
Preheat oven to 350 degrees. Grease the bottom of an 8×4-inch loaf pan. In a large bowl, combine flour, baking soda, cinnamon, and salt. In a medium bowl, whisk together eggs, bananas, sugar, butter, and vanilla. Add to flour mixture; stir just until moistened. Stir in cinnamon chips. Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean, 50 to 55 minutes. Cool in pan 10 minutes before removing to a wire rack. Makes 1 medium loaf.

1 tablespoon finely grated lemon zest
1 teaspoon fresh lemon juice
Lemon slices and/or finely grated lemon zest (optional)
Assorted fresh fruit, such as strawberries, pineapple, grapes, kiwi, cantaloupe, for dipping
For dip, in a large bowl, combine vanilla yogurt, lemon yogurt, whipped topping, 1 tablespoon lemon zest, and lemon juice. Garnish with lemon slices and/or lemon zest before serving, if desired. Serve with assorted fresh fruit. Makes 24 servings.

CRANBERRY MARTINI

Crushed ice
5 tablespoons cranberry juice cocktail, chilled
3 tablespoons vodka
1 tablespoon fresh orange juice
Fill a martini shaker 3/4 full with ice. Add cranberry juice cocktail, vodka, and orange juice. Cover and shake. Strain into a martini glass. Makes 1 serving.

By not having to roll and cut out dough or frost when cooled, it’s easy to get out of the kitchen quick. And Santa will surely be pleased to have a plate of fresh-baked cookies to welcome him. All that’s needed is milk and perhaps some food for the reindeer. Now this is one sugarplum of a shortcut that’s perfect on a long winter’s night.

EASY CHOCOLATE WHITE CHIP COOKIES

1 (16.5 ounce) package plain devil’s food cake mix
1/2 cup (1 stick) butter, melted
3 tablespoons water
1 egg
1 teaspoon vanilla
1 cup white chips
Preheat oven to 350 degrees. In a large bowl, combine cake mix, butter, water, egg, and vanilla. Stir with a wooden spoon until mixed. Stir in white chips. Drop by heaping teaspoons 2 inches apart on ungreased cookie sheets. Bake until centers are almost set, 10 to 12 minutes. Cool 2 minutes before removing to a wire rack. Makes about 4 dozen cookies.

3 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon

3/4 teaspoon salt
1/2 teaspoon baking powder
3 eggs
1 1/2 cups applesauce
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup (1 stick) butter, melted
1/2 cup milk
1 cup chopped fresh cranberries
1/2 cup chopped walnuts
Confectioners’ sugar (optional)
Preheat oven to 350 degrees. Grease the bottoms of four 5×3-inch loaf pans. In a large bowl, combine flour, baking soda, cinnamon, allspice, salt, and baking powder. In a medium bowl, whisk together eggs, applesauce, sugar, brown sugar, butter, and milk. Add to flour mixture; stir just until moistened. Stir in cranberries and walnuts. Divide batter amongst prepared pans. Bake until a toothpick inserted in centers comes out clean, 33 to 38 minutes. Cool in pans 10 minutes before removing to a wire rack. Cool completely. Sprinkle with confectioners’ sugar, if desired. Makes 4 miniature loaves.

Cranberry Sauce is good enough on its own, but the addition of cloves and cinnamon makes it even better. By simmering ruby-red cranberries in brown sugar syrup with a couple sticks of cinnamon and an orange slice that’s dotted with cloves, a dish of cranberry sauce is elevated to a new level.

A welcome addition to the Thanksgiving Day table, this side dish is an excellent choice for holiday entertaining. Perfect for making ahead, it can be prepared up to five days in advance and stored, covered, in the fridge. Sprinkle with finely grated orange zest just before serving for a refreshing finish.

SPICED CRANBERRY SAUCE

1 medium orange
6 whole cloves
1 (12-ounce) bag fresh cranberries
1 cup water
3/4 cup packed brown sugar
2 (3 to 3 1/2-inches) cinnamon sticks
1 tablespoon sugar
Finely grated orange zest (optional)
Using a wooden skewer, poke 6 evenly spaced holes around the center of the orange; insert cloves into holes. Cut a slice out of the orange to include all of the cloves. In a medium saucepan, combine cranberries, water, brown sugar, cinnamon sticks, and orange slice. Squeeze juice from ends of orange into cranberry mixture. Bring to a boil. Reduce heat; simmer, partially covered, until most of the cranberries have popped, about 20 minutes, stirring occasionally. Remove from heat. Remove orange slice and cinnamon sticks. Stir in sugar; mash with a potato masher. Cool at least 1 hour before serving. Sprinkle with finely grated orange zest before serving, if desired. (May be prepared up to five days in advance; store covered and refrigerated.) Makes 8 servings.
