Apple Pear Sauce

3 medium cooking apples, peeled, cored, and coarsely chopped
2 medium pears, peeled, cored, and coarsely chopped
3 tablespoons sugar
1/2 cup cranberry juice cocktail
2 tablespoons water
1 tablespoon lemon juice
2 (3- to 3 1/2-inches each) cinnamon sticks

In a medium saucepan, combine apples, pears, sugar, cranberry juice cocktail, water, lemon juice, and cinnamon sticks. Bring to a boil. Reduce heat; simmer, partially covered, until apples and pears are tender, 10 to 12 minutes, stirring occasionally. Remove from heat. Remove cinnamon sticks. Mash with a potato masher to desired texture. Serve warm or chilled. Makes about 2 cups.

FRESH TOMATO SALSA

5 medium tomatoes, seeded and chopped
1 small green bell pepper, chopped
2 medium jalapeño chiles, seeded and minced
1/4 cup minced white onion
2 medium scallions, thinly sliced
3 tablespoons chopped fresh cilantro
1 garlic clove, minced
2 tablespoons fresh lime juice
3/4 teaspoon salt
1/2 teaspoon sugar
1/8 teaspoon pepper

In a medium bowl, combine all ingredients. Cover, and refrigerate at least 1 hour. Makes about 3 cups salsa.

You can save time in the kitchen by using store-bought frozen meatballs that have been thawed instead of making your own, if desired.

CRANBERRY COCKTAIL MEATBALLS

MEATBALLS
1 1/2 pounds lean ground beef
1/2 cup plain bread crumbs
1 small onion, minced
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon pepper
1 egg, slightly beaten
 

SAUCE
3/4 cup jellied cranberry sauce
1/2 cup chili sauce
1/4 cup barbecue sauce
2 tablespoons water
1/2 teaspoon onion powder
Preheat oven to 375 degrees. For meatballs, in a large bowl, combine ground beef, bread crumbs, onion, garlic powder, salt, pepper, and egg. Shape into 1-inch balls; place in a 10×15-inch baking pan. Bake until browned and cooked through, 28 to 32 minutes. For sauce, in a large saucepan, combine cranberry sauce, chili sauce, barbecue sauce, water, and onion powder. Bring to a boil over medium-high heat, stirring continuously. Add meatballs. Reduce heat; simmer until heated through, about 5 minutes, stirring occasionally. Serve with wooden picks. Makes about 60 meatballs.

STOVETOP MACARONI AND CHIPOTLE CHEESE

8 ounces dried rotini (corkscrew) pasta

1 1/2 cups milk
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups (8 ounces) shredded Sartori Chipotle BellaVitano® cheese
Smoked paprika (optional)

Begin cooking macaroni in a large saucepan according to package directions. Meanwhile, melt butter in a medium saucepan over medium heat; stir in flour and onion powder. Add milk. Bring to a boil. Boil 1 minute, stirring continuously. Remove from heat. Stir in salt and pepper. Add cheese. Stir until cheese has melted. Drain macaroni; return to saucepan. Add cheese mixture; stir gently to combine. Cook over medium-low heat 2 minutes, stirring occasionally. Remove from heat; let stand 5 minutes before serving. Sprinkle with smoked paprika, if desired. Makes 6 servings.

Perfect for making ahead, it can be prepared up to five days in advance and stored, covered, in the fridge. Sprinkle with finely grated orange zest just before serving for a refreshing finish.

SPICED CRANBERRY SAUCE

1 medium orange
6 whole cloves
1 (12-ounce) bag fresh cranberries
1 cup water
3/4 cup packed brown sugar
2 (3 to 3 1/2-inches) cinnamon sticks
1 tablespoon sugar
Finely grated orange zest (optional)
Using a wooden skewer, poke 6 evenly spaced holes around the center of the orange; insert cloves into holes. Cut a slice out of the orange to include all of the cloves. In a medium saucepan, combine cranberries, water, brown sugar, cinnamon sticks, and orange slice. Squeeze juice from ends of orange into cranberry mixture. Bring to a boil. Reduce heat; simmer, partially covered, until most of the cranberries have popped, about 20 minutes, stirring occasionally. Remove from heat. Remove orange slice and cinnamon sticks. Stir in sugar; mash with a potato masher. Cool at least 1 hour before serving. Sprinkle with finely grated orange zest before serving, if desired. (May be prepared up to five days in advance; store covered and refrigerated.) Makes 8 servings.

Reduce heat; simmer, covered, until rhubarb is tender, about 5 minutes, stirring occasionally. Meanwhile, mash the remaining 1 1/2 cups blueberries. In a small bowl, combine cornstarch and lemon juice. Add mashed blueberries and cornstarch mixture to rhubarb mixture. Bring to a boil. Reduce heat; simmer 2 minutes, stirring frequently. Let stand 10 minutes before serving. Makes 2 cups.
