Perfect for potlucks, backyard barbecues, or to tote to your favorite picnic spot, this pasta salad is a tasty twist on tradition.

By adding a splash of the liquid from a jar of marinated artichoke hearts, it’s easy to boost flavor in the vinaigrette. And you can use store-bought Italian dressing in place of making the vinaigrette, if desired.

Pack into a Mason jar and attach a fork for a fun and convenient way to savor this summer salad.

PASTA SALAD

1 (16-ounce) package rotini (corkscrew) pasta
1 (7.5-ounce) jar quartered marinated artichoke hearts, drained, chopped and reserving 2 tablespoons liquid
1/2 cup olive oil
1/2 cup red wine vinegar
1 tablespoon sugar
3/4 teaspoon salt
1/2 teaspoon dried oregano, crushed
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1/4 pound sliced provolone cheese, cut into strips
1/4 pound sliced Genoa salami, cut into strips
1/4 cup minced red onion
1 small red bell pepper, chopped
2 medium tomatoes, seeded and chopped
1 (3.8-ounce) can sliced pitted ripe olives, drained
1/3 cup grated Parmesan cheese
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons chopped fresh basil

Begin cooking rotini according to package directions.

Meanwhile, prepare vinaigrette. In a medium bowl, combine the 2 tablespoons reserved artichoke liquid, olive oil, vinegar, sugar, salt, oregano, basil, garlic powder, and pepper; whisk until well blended. In a large bowl, combine provolone cheese, salami, onion, pepper, tomatoes, artichoke hearts, olives, Parmesan cheese, and parsley.

Drain rotini; rinse with cold water and drain again. Add rotini to cheese and salami mixture; drizzle with vinaigrette. Toss to combine. Cover and chill for at least 1 hour and up to 1 day in advance. Makes 12 servings.

2 cups sliced strawberries
2 tablespoons strawberry jam
1 teaspoon sugar
1 teaspoon fresh lemon juice
Prosecco, chilled
Fresh strawberry slices (optional)
In a blender or food processor, combine sliced strawberries, jam, sugar, and lemon juice; process until smooth. Strain through a fine-mesh sieve; discard seeds. Divide puree into six champagne glasses; slowly add prosecco. Garnish each glass with a strawberry slice, if desired. Makes 6 servings.

You can substitute milk chocolate chips in place of semisweet chips, and chopped peanuts for walnuts, if desired. However you make it, this quick and easy recipe will help make the season bright.

EASY ROCKY ROAD CANDY

1 (12-ounce) package semisweet chocolate chips
1 1/2 cups miniature marshmallows
1/2 cup chopped walnuts
Line an 8×8-inch square baking pan with foil, letting ends extend beyond edges on 2 sides. In a medium microwave-safe bowl, melt chocolate chips in the microwave according to package directions. Stir in marshmallows and walnuts. Spread into prepared pan. Refrigerate until firm, about 1 hour. Remove candy by lifting foil ends; place on a cutting board. Remove foil; cut into squares. Makes 24 candies.

CRANBERRY COCKTAIL MEATBALLS

MEATBALLS
1 1/2 pounds lean ground beef
1/2 cup plain bread crumbs
1 small onion, minced
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon pepper
1 egg, slightly beaten
 

SAUCE
3/4 cup jellied cranberry sauce
1/2 cup chili sauce
1/4 cup barbecue sauce
2 tablespoons water
1/2 teaspoon onion powder
Preheat oven to 375 degrees. For meatballs, in a large bowl, combine ground beef, bread crumbs, onion, garlic powder, salt, pepper, and egg. Shape into 1-inch balls; place in a 10×15-inch baking pan. Bake until browned and cooked through, 28 to 32 minutes. For sauce, in a large saucepan, combine cranberry sauce, chili sauce, barbecue sauce, water, and onion powder. Bring to a boil over medium-high heat, stirring continuously. Add meatballs. Reduce heat; simmer until heated through, about 5 minutes, stirring occasionally. Serve with wooden picks. Makes about 60 meatballs.

CRANBERRY CABERNET SAUCE

1 (12-ounce) bag fresh cranberries
1/2 cup Cabernet Sauvignon
1/2 cup orange juice
3/4 cup sugar
1 teaspoon finely grated orange zest
1/2 teaspoon cinnamon

In a medium saucepan, combine cranberries, wine, orange juice, sugar, orange zest, and cinnamon. Bring to a boil; reduce heat. Simmer, partially covered, until most of the cranberries have popped, about 20 minutes, stirring occasionally. Remove from heat. Mash with a potato masher. Cool at least 1 hour before serving. (May be prepared up to five days in advance; store covered and refrigerated.) Makes 8 servings.

COSMO MOJITO

4 fresh mint leaves
1 teaspoon sugar
2 tablespoons fresh lime juice
3 tablespoons light rum
1 tablespoon orange-flavored liqueur, such as Triple Sec
Crushed ice
1/4 cup cranberry juice cocktail, chilled
Lemon-lime soda or club soda
Lime slices (optional)
Mint sprigs (optional)
Place mint, sugar, and lime juice in a tall glass. With a muddler or back of spoon, crush mint until sugar has dissolved. Stir in rum and orange-flavored liqueur. Fill glass with crushed ice; pour cranberry juice cocktail into glass; top with soda. Stir drink well. Garnish with lime slices and mint sprigs, if desired. Makes 1 serving.

2 teaspoons grated onion (optional)
In a large bowl, combine mayonnaise, sour cream, vinegar, sugar, celery seed, salt, and pepper. Add coleslaw mix and onion, if desired; toss to combine. Cover, and refrigerate at least 2 hours. Makes 8 servings.

Smoked paprika (optional)

Begin cooking macaroni in a large saucepan according to package directions. Meanwhile, melt butter in a medium saucepan over medium heat; stir in flour and onion powder. Add milk. Bring to a boil. Boil 1 minute, stirring continuously. Remove from heat. Stir in salt and pepper. Add cheese. Stir until cheese has melted. Drain macaroni; return to saucepan. Add cheese mixture; stir gently to combine. Cook over medium-low heat 2 minutes, stirring occasionally. Remove from heat; let stand 5 minutes before serving. Sprinkle with smoked paprika, if desired. Makes 6 servings.
