MARBLE BANANA BREAD

Vegetable shortening, for pans
2 cups flour, divided
1 1/4 teaspoons baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
3/4 cup sour cream
2 eggs
3 medium overripe bananas, mashed
1 cup sugar
1/4 cup packed brown sugar
1/2 cup (1 stick) butter, melted
1 teaspoon vanilla
2 tablespoons unsweetened cocoa powder
1/3 cup miniature semisweet chocolate morsels, plus 2 tablespoons

Preheat oven to 350 degrees. Grease the bottoms of two 8×4-inch loaf pans. In a large bowl, whisk together 1 1/2 cups flour, baking soda, cinnamon, and salt. In a medium bowl, whisk together sour cream, eggs, bananas, sugar, brown sugar, butter, and vanilla. Add egg mixture to flour mixture. Stir just until moistened.

Remove 1/3 of the batter to a small bowl; stir cocoa powder and chocolate morsels into this batter. Stir the remaining 1/2 cup flour into the plain batter. Spread half of the plain batter into both prepared pans. Using half of the chocolate batter, drop heaping tablespoons randomly onto plain batter in both pans. Spread the remaining plain batter over chocolate batter in both pans. Drop the remaining chocolate batter over plain batter in the same manner in both pans. Using a butter knife, swirl through the batters to create a marbled effect. Sprinkle loaves with the remaining 2 tablespoons miniature semisweet chocolate morsels. Bake until a toothpick inserted in center comes out clean, 40 to 45 minutes. Cool in pan 10 minutes before removing to a wire rack. Cool completely. Makes 2 medium loaves

FUDGE BROWNIES

Nonstick cooking spray
1/2 cup (1 stick) butter, melted
3 tablespoons vegetable oil
1 1/3 cups sugar
2 eggs
1 tablespoon brewed coffee
1 1/2 teaspoons vanilla
3/4 cup flour
3/4 cup unsweetened cocoa powder

Preheat oven to 350 degrees. Line an 8×8-inch square baking pan with foil, letting ends extend beyond edges on 2 sides. Coat foil with nonstick cooking spray. In a large bowl, whisk together butter, vegetable oil, and sugar. Add eggs, coffee, and vanilla; whisk to combine. Add flour and cocoa powder; stir until smooth. Spread into prepared pan. Bake until a toothpick inserted in center comes out with moist crumbs attached, 25 to 30 minutes. Cool completely on a wire rack. Remove brownies by lifting foil ends; peel off foil. Place on a cutting board and cut into squares. Makes 16 brownies.

3 tablespoons chopped fresh cilantro
1 garlic clove, minced
2 tablespoons fresh lime juice
3/4 teaspoon salt
1/2 teaspoon sugar
1/8 teaspoon pepper

In a medium bowl, combine all ingredients. Cover, and refrigerate at least 1 hour. Makes about 3 cups salsa.

1/8 teaspoon minced garlic
Salt to taste
Assorted crackers

In a medium bowl, combine cream cheese, butter, and milk. Beat with an electric mixer until creamy. Stir in chives, parsley, garlic, and salt to taste. Cover, and refrigerate at least 1 hour. Serve with assorted crackers. Makes 8 servings.

Begin cooking macaroni in a large saucepan according to package directions. Meanwhile, melt butter in a medium saucepan over medium heat; stir in flour and onion powder. Add milk. Bring to a boil. Boil 1 minute, stirring continuously. Remove from heat. Stir in salt and pepper. Add cheese. Stir until cheese has melted. Drain macaroni; return to saucepan. Add cheese mixture; stir gently to combine. Cook over medium-low heat 2 minutes, stirring occasionally. Remove from heat; let stand 5 minutes before serving. Sprinkle with smoked paprika, if desired. Makes 6 servings.

Cook tortellini according to package directions. Drain; rinse with cold water and drain again. In a large bowl, combine tortellini, broccoli, parsley, artichokes, scallions, basil, salt, and pepper; toss to combine. Pour dressing over tortellini mixture; toss to combine. Cover, and refrigerate 1 hour. Just before serving, add Parmesan cheese and tomatoes; toss to combine. Makes 6 servings.
